Fire up the blender – you’re in for a healthy treat!

The New Year is a time for rebirth and renewal. In January we seek to refresh our lives with the usual resolutions of good intentions, more movement and healthy eating. As a former health coach, one of the most asked questions I got was, how do I eat healthy without spending a ton of time in the kitchen? My answer included: soups, grain bowls and always, smoothies.

My Power Pomegranate Oat Smoothie recipe is the perfect light meal or snack. I love to drink it post yoga at home or on the go while running errands. Made from pantry staples I like to keep on hand in the winter, it’s packed with oats for energy, chia seeds and Greek yogurt for protein and healthy fat, and pomegranate and beets for brightness, phytonutrients and antioxidants. While I prefer to use local produce as much as I can, fruit isn’t exactly abundant in the Midwest in January. Luckily, my grocery store does get pomegranates and I really enjoy them, so it’s no surprise they’re a feature of this recipe.
 
This look takes me from yoga to errands to home. With practical easy layers, and comfortability, it’s flexible for movement and still put together enough for running around town. Pretty sure I’ll be living in the black arrow print legging and toggle closure cardigan during the rest of winter.

Power Pomegranate Oat Smoothie

Note: If you cannot source pure pomegranate juice you can use pure cranberry juice, water or unsweetened almond milk. The beets are largely for color and nutrition, if you’re apprehensive about them I promise the flavor is practically undetectable.
 
INGREDIENTS:
  • 1/2 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1 tablespoon chia seeds
  • 1 cup pure pomegranate juice
  • 1 cup pomegranate arils
  • 1/4 cup red beets (raw)
  • 1/4 teaspoon cinnamon
  • pinch Himalayan salt (optional)
DIRECTIONS:
1. Combine all of the ingredients in a blender and process until completely smooth.
2. Pour into your favorite to go container and enjoy your dose of healthy wherever you go.
